Guacamole ala Jakarta
A hot, delicious dip for fried cassava chips
Ingredients:
1/4 small onion
1-2 plump, seeded chili Serrano (or chili Toraja, a plump green
chili available in supermarkets)
3 green chili paddy, seeded
2 sprigs fresh cilantro (daun ketumbar, Chinese parsley)
1/4 tsp salt or to taste
2 medium-ripe soft avocados, flesh scooped and mashed
1 red tomato, skinned, seeded and finely chopped
1/4 small onion, finely chopped
2 sprigs fresh cilantro, finely chopped
Method:
1. Grind onion, chili Serrano, chili paddy, cilantro sprigs and
salt to make a fine paste
2. Add avocado to paste and mix in mortar
3. Mix in tomato, onion and chopped cilantro
Makes 3 portions. Serve immediately.
Krim apokat
Ingredients:
350 g ripe avocado, flesh scooped
2 pisang raja bananas, sliced
75 g red grapes
150 ml whipped cream
Method:
1. Divide avocado in two sundae glasses or similar
2. Add banana slices and grapes
3. Top with whipped cream

Pai teler Kemayoran
A pie from North Jakarta, where people are known for their
culinary creations
Ingredients:
Crust:
200 g wheat flour
100 g margarine
100 g ground sugar
1 egg
1 T powdered milk
1 T margarine, for greasing
1 egg yolk, for brushing the sides of the pie pan
1 medium-sized pie pan or plate
Filling:
500 ml thick coconut milk
2 egg yolks
3 T wheat flour
5 T sugar
1 T powdered milk
1 package colorless agar-agar (available in most supermarkets)
300 g avocado flesh, pureed
Garnish:
100 g ripe avocado, sliced
50 g ripe jackfruit, sliced
50 g young coconut flesh, scraped
Method:
1. Mix flour, margarine, sugar, yolks and powdered milk into a
dough and knead until smooth
2. Grease the pie pan or plate and press the dough onto the
bottom and around 2 cm up the sides, forming a shell. Brush with
egg yolk and bake 35 minutes in medium heat oven or until done
and golden. Set aside and let cool.
3. Mix coconut milk, yolks, flour, sugar, powdered milk and agar-
agar in a saucepan. Let it come to the boil slowly while
stirring. Add avocado puree to the mixture, lower flame. Continue
cooking until filling thickens. Cool.
4. Pour filling into baked shell, garnish with avocado slices,
jackfruit and young coconut. Place in freezer for 15-20 minutes
until set.
