A salmon that won't tip the scales

JAKARTA (JP): "You are what you eat," an old adage says. To make a "healthy you" requires a healthy diet which gives you adequate energy and daily nutrients.

This week we have a recipe for 500-calorie grilled salmon as served by Javana Spa, an establishment that reintroduces light food as part of its healthy living program.

(A healthy diet as preached by the spa starts from antioxidant sources -- plenty of fresh fruit and vegetables in your daily diet and cut down on salt, sugar and fat in your meals.)

Grilled Salmon

* 100 g salmon, seasoned with Lea & Perrins sauce, lemon juice salt and pepper * 40 g boiled potatoes * 30 g boiled broccoli * 15 g carrot * 15 g snow peas * herbed mayonnaise * slices of orange

Herbed mayonnaise: * 1 tube Japanese tofu * 1 tsp French mustard * 1/4 cup chopped onion * 2 tsp minced garlic * 2 tsp chopped parsley * 2 tsp Enpi sauce (available in supermarkets) * 2 tsp chopped capers * 2 tbsp lemon juice * A dash of salt and pepper

(Makes 1 serving)

1. Season salmon with Lea & Perrins sauce, lemon juice, salt and pepper. Grill until cooked.

2. Arrange boiled vegetables and salmon on a serving plate, garnish with orange slices and serve with herbed mayonnaise.

3. To prepare herbed mayonnaise: using a blender, mix tofu until smooth, add in mustard beat well. Add in remaining ingredients, combine well.
