Thai chicken wings international favor

JAKARTA (JP): As we all know, Thai fare is well-known worldwide as indicated by the popularity of Thai restaurants. One Thai dish said to be gaining popularity is Gar Hor Bai Toey, fried chicken wrapped in pandanus leaves.

This savory fried chicken has an exotic fragrance derived from the ingredients and, of course, the scented pandanus leaves.

Fried chicken wrapped in pandanus leaves

* 200 g boneless chicken pieces, cut into five pieces * 5 pandanus leaves * 5 g basil leaves * salt and pepper to taste * 10 g sesame seed * 1 tbsp sesame oil * 10 g garlic, mashed

(Makes 5 pieces)

For the sauce * 1 tsp sesame oil * 1 tsp fish sauce * 10 g sesame seeds * 10 g garlic * 10 g parsley * salt and pepper to taste * 100 g caramel * 1 tbsp lime juice

1. Mix all the ingredients, except the pandanus leaves and let sit for at least two hours. 2. Wrap each chicken piece in pandanus leaves. Deep fry the chicken pieces until cooked. Place them on absorbent tissue. 3. Meanwhile, prepare the sauce by mixing together all ingredients. 5. Serve warm with the sauce.
