Taste sensations from Victoria's

JAKARTA (JP): An elegant ambience, expensive wine and classical music almost always set the mood for romantic evenings. But Victoria's Char-grill Steakhouse and Cafe does more than satisfy palates.

Winner of the 1995 and 1996 Amex award for criteria including quality food, ambience and hospitality, the steakhouse and cafe boast regulars from government officials and businessmen to celebrities.

Chef Syefrudin Juhri of the Victoria's outlet at Victoria Center, South Jakarta, has provided two favorite recipes from his kitchen.

Roast Chicken -- Serves 1

Served with fresh vegetables and a side dish of baked potatoes

or french fries.

Ingredients:

Chicken (half) 400 grams

Salt 5 grams

Pepper 1 gram

Seasoning : Mire Poix 100 grams

Rosemary 1/4 grams

Mustard 1/2 teaspoon

Butter, softened 1-2 tablespoons

French fries 100 grams

Barbecue sauce 100 cc

Preparation:

Preheat the oven to 180 degrees celcius.

Sprinkle salt and pepper on chicken and season with mustard,

mire poix and rosemary.

Truss the chicken and place it in a roasting pan. Rub the

softened butter over the skin of the chicken.

Bake for 40 minutes, and baste the chicken as it roasts with

the pan juices.

Cover the chicken with barbecue sauce.

Spaghetti Krakatau -- Serves 1

Ingredients:

Pasta spaghetti, cooked and drained 150 grams

Meat sauce 110 grams

Tomatoes 20 grams

Mushrooms 30 grams

Tomato paste 50 grams

Beef 30 grams

Salt 1 gram

Pepper 1/2 gram

Hot chili 2 grams

Preparation:

Wash mushrooms and soak in tepid water. When soft, slice and season with salt and pepper.

Saute beef, cut in cubes and add in the mushrooms and hot chili. Cook, stir and add sliced tomatoes, meat sauce and tomato paste and allow to simmer slowly, until sauce is thick.

Add spaghetti into the mixture. Cook and stir gently.

Serve dish garnished with sliced tomatoes and parsley. (02)
