Spicy prawn and creamy pudding for breaking the fast

Getting bored with the same food when breaking the fast? Try a
spicy meal from Bengkulu, called Bagar prawns for that special
moment and serve the smooth and creamy mandarin pudding for a
dessert afterward.

These recipes are taken from two cookbooks, titled Hidangan
Nusantara by Rudy Choirudin and Kue Klasik Favorit 3 by Doddy
Pamudji.

Bagar Prawns
* 750g prawns
* 4 cloves
* 2pcs fenugreek
* 300ml water
* 2tbsp shredded coconut
* 1tsp salt
* cooking oil

Finely ground spices:
* 8 red chilies
* 5 shallots
* 3 cloves garlic
* 2cm turmeric
* 2cm ginger
* 2cm galangale
* 1tbsp ground coriander
* 3pcs nutmeg

1. Combine prawns with half of the ground spices and mix well.
Set it aside for 10 minutes.

2. Heat cooking oil and stir fry the remaining ground spices with
salt and shredded coconut, stir well until fragrant.

3. Add in prawns and cook until the prawns change color. Pour in
water, add in fenugreek and cloves, cook until the sauce
thickens. Remove from heat and serve.

Mandarin Pudding

To make the cake:
* 3 egg yolks
* 1 egg white
* 60g icing sugar
* 1 1/2tbsp flour
* 1tbsp butter

To make the agar-agar (jelly) layer:
* 3 1/2g white agar-agar powder
* 90g sugar
* 400ml water
* 4tbsp lemon juice

For decoration:
* 1 (425g) can of mandarins, discard liquid
* 1 cup whipped cream, whisked until stiff

1. To make the cake: Beat egg and sugar until they froth. Add in
flour and butter, mix until even. Butter and flour the small
baking tins. Pour the egg mixture into the tins until half full
and bake for 25 minutes until golden. Remove from the oven and
let cool.

2. To make the agar-agar layer: Mix well the powder, sugar and
water and bring to the boil. Add lemon juice, mix well and remove
from heat. Carefully fill the half-full baking tins with the
agar-agar mixture until full. Cool until set.

3. Serve the pudding by topping it with whipped cream and
decorate it with canned mandarin segments.
