Beef ribs from southern Sumatra
JAKARTA (JP): Malbi Beef Ribs from southern Sumatra are distinguished by their medley of spices, including heaping on doses of chilis.
* 1 kg of beef ribs * 7.5 cc cooking oil * 5 cloves * 1 cinnamon stalk * 3 bay leaves * 3 cm piece of lightly crushed galangale * 12 teaspoons of salt * 350 cc of sweet soy sauce * 1250 cc of water * 5 chilies, sliced to about the size of a match * 2 tablespoons of fried red onions
Spices to be ground: * 3 chilies * 7 cloves of garlic * 5 red onions * 5 candlenuts * 1 teaspoon of pepper * 2 nutmegs
1. Heat oil, stir-fry the ground spices along with cloves, cinnamon, bay leaves and galangale until done. 2. Add the ribs. Cook until color of ribs changes. Add some sweet soy sauce and cook until fragrant. Reduce heat and cover. 3. Cook until tender and a little broth remains. Remove from heat and place in a serving bowl. 4. Heat oil and stir-fry the chilies until they are soft. Remove from heat and cover the ribs with them and the fried red onions. Serve hot.
