Amid growing public interest in healthy food, various local ingredients are being revisited. These ingredients are not only consumed traditionally but are also being developed into flour, beverages, food supplements, and functional food products. One such ingredient is the lima bean, or Phaseolus lunatus L., a legume that contains plant protein, carbohydrates, fibre, and a number of bioactive compounds. This potential makes lima beans an attractive alternative protein source. However, before wider development can proceed, a crucial question must be answered: is lima bean safe for repeated consumption?

The term ‘natural’ is often equated with ‘safe’. In reality, some plant-based foods can naturally contain anti-nutritional compounds, such as phytates, tannins, digestive enzyme inhibitors, lectins, and cyanogenic compounds. These substances can be reduced through proper processing, including soaking, boiling, drying, and milling. Therefore, food research must go beyond discussing protein, fibre, or antioxidant content. The safety aspect must also be scientifically proven to provide a strong foundation for food innovation.

To address this need, researcher Rita Maliza, Ph.D., from Universitas Andalas, along with her team and collaborators, conducted a safety evaluation of lima bean flour using male and female test animals. The processed lima bean flour was administered daily for 28 days at various dosage levels. The researchers then observed the general condition of the animals, changes in body weight, feed consumption, blood biochemical parameters, organ weights, organ shapes, and tissue structures. In toxicity testing, the examination was not limited to a single organ but included organs involved in digestion, metabolism, storage, and the excretion of substances from the body, such as the liver, kidneys, pancreas, and digestive tract.

Overall, the observations during the study period did not reveal signs of severe organ damage due to the administration of lima bean flour. Some minor changes might appear in certain parameters, but these changes must be assessed alongside blood test results, tissue conditions, organ weights, and the body’s overall response. This indicates that a safety conclusion cannot be determined from a single laboratory figure alone. Further research with longer observation periods and broader parameters is still needed before results from animal studies can be applied to humans.

This study represents a step towards the science-based development of lima beans as a local food source. The results do not imply that raw lima beans can be consumed directly without processing, as food safety is influenced by the processing method, the quantity consumed, and the duration of consumption. However, with standardised processes, nutritional content testing, and continuous safety evaluations, lima beans have the opportunity to be upgraded from a local commodity into a safe, nutritious, and economically valuable source of plant protein and functional food ingredients.
