Butchery Training Centre (BTC) and The Gordon Institute of TAFE, Australia (The Gordon) are collaborating to present butchery, meat preparation, cookery, and food safety training in Jakarta from July to August 2026. This initiative aims to develop the workforce in Indonesia’s skilled butcher and culinary professional sectors through a training approach based on international standards and modern industry practices. The collaborative programme is made possible thanks to support from the Yes to International Students Fund, an initiative of the Victorian State Government, Australia, which aims to build and strengthen strategic industry-education collaborations in various countries. Carlos Lalack, Programme Director of Butchery Training Centre, stated that the programme responds to the growing need in Indonesia’s hospitality and food service industry for a professional workforce with technical skills, food safety understanding, and competencies aligned with international standards. “Through this collaboration with The Gordon, we want to open access to vocational education that is relevant to current industry needs while preparing Indonesian talent to compete at a global level,” said Carlos. The programme will be conducted in person in Jakarta and is designed as a pilot project to gauge market needs, the effectiveness of learning methods, and the potential for long-term programme development in Indonesia. BTC and The Gordon will also conduct joint promotions to reach the hospitality, culinary, and food service markets in Jakarta. Globally, the meat processing industry faces a skilled labour shortage, including professional butchers and food handlers. A 2026 global meat processing industry report indicates that more than 60 per cent of industry players face difficulties finding workers with competencies that meet international operational and food safety standards. This situation drives the increasing need for vocational training focused on industry practice and food safety. The pilot project consists of three main courses: Foundations of Meat Preparation and Cookery Course (Non-Accredited), covering practical meat preparation, cutting techniques, cooking techniques, and meat handling; Food Handlers Course (Accredited), providing basic food safety training through the unit SITXFSA005 – Use Hygienic Practices for Food Safety; and Food Safety Skill Set (Accredited), covering food safety procedure supervision through the units SITXFSA005 and SITXFSA006 – Participate in Safe Food Handling Practices. As one of the professional butchery training centres in Indonesia, BTC has been active in presenting various workshops, industry training, and practice-based skills development to support the improvement of professional standards in the meat, hospitality, and food service sectors. The Gordon is a leading Technical and Further Education (TAFE) institution in Australia with extensive experience in industry-based vocational education, particularly in hospitality, culinary, and food safety training.
