The Aston Serang Hotel & Convention Centre has organised the ‘Champion Sambal Mixing Competition’ as part of the Banten Cultural Centre programme, which focuses on the preservation of local culture and cuisine. The event saw hotel guests compete to create the best sambal blends using a variety of provided ingredients and spices.

To ensure a seamless competition, the Aston Serang team prepared all necessary requirements, ranging from cooking equipment to raw materials and spices, allowing participants to focus on their creativity and processing techniques. Through this initiative, Aston Serang aims to highlight sambal as a significant part of Indonesia’s culinary heritage and cultural identity.

The competition was judged by Executive Chef Iwan Irawan, who evaluated aspects such as flavour, balance of spices, aroma, texture, creativity, cleanliness, and presentation. “Sambal is a vital part of Indonesia’s culinary identity. Through this competition, participants are not only competing for the best flavour but are also helping to introduce the diversity of Nusantara’s cuisine to the public,” stated Chef Iwan Irawan.

As a form of appreciation, the winning sambal recipe will be featured in the ‘Singgasana Sultan’ programme, a buffet dinner hosted at Aston Serang. Guests attending the programme will have the opportunity to taste the award-winning sambal as part of the hotel’s Indonesian culinary offerings. This event successfully combines competition, culinary education, and cultural preservation, involving both guests and staff in the ongoing efforts of the Banten Cultural Centre to safeguard Indonesia’s culinary legacy.
