Restaurants hold promotion for school vacation

JAKARTA (JP): June is probably the best time for family picnics as school vacations arrive in the next few days.

The Amigos Restaurants in Jakarta and Cilegon, West Java, is holding a special barbecue promotion until the end of June to celebrate the school vacation.

Suwarno, chef of Amigos Restaurant at Setiabudi Building, South Jakarta, has prepared two recipes especially for The Jakarta Post's readers.

Salmon Kebab B.B.Q (serves 1)

Grilled fresh Tasmanian salmon kebab topped with mango salsa and served with mashed potato.

Ingredients:

Fresh Tasmanian salmon 160 grams

Green bell pepper 30 grams

Onions 30 grams

Tomatoes 30 grams

B.B.Q. sauce 32 grams

Sweet Soya 2 teaspoons

Mashed Potato 100 grams

Mango Salsa

Mango Salsa

Ingredients:

Mango 200 grams

Shallots (finely chopped) 30 grams

Jalapeno (finely chopped) 30 grams

Celery (finely chopped) 20 grams

Onion (finely chopped) 30 grams

Lime Juice 1 teaspoon

Orange Juice 1/2 teaspoon

Cumin 1 teaspoon

Salt 1 teaspoon

Pepper 1 teaspoon

Cut mango into cubes and mix with other ingredients.

Chill for at least half an hour before serving with Salmon Kebab barbecue.

Preparation:

Cut fresh salmon into six pieces. Dress with lemon, salt and pepper.

Cut onion and tomato to the same size as the fresh salmon.

Alternate fresh salmon and vegetables on two skewers and barbecue.

Cover the barbecued salmon with mango salsa.

Combo B.B.Q (serves 1)

Mixed grilled marinated, chicken, lamb chop, tenderloin with barbecue sauce. Serve with potatoes and vegetables.

Ingredient:

Boneless chicken 100 grams

Australian lamb chop 100 grams

Australian tenderloin 100 grams

Barbecue sauce 60 grams

Potatoes 150 grams

Vegetables 5 grams

Seasoning to taste

Garlic 5 grams

Ginger 5 grams

Preparation:

Marinate chicken, lamb chop and tenderloin with barbecue sauce for 24 hours.

Grill the meat and then cook in the oven until well-done.

Serve with potatoes of your choice on an oval plate.
