Make wonton snacks the quick and easy way

JAKARTA (JP): Ever heard, or even savored, fried wonton? The dish is one variety of the popular Chinese dim sum, usually served before a main meal.

Here is a recipe for this crispy, tasty snack that includes a guide on how to prepare Prawns in Soya Sauce, which is part of the menu.

Fried Wonton * 35 wonton wrappers * oil for deep frying * 2 tbsp cooking oil for stir frying * 2 cloves of garlic * 1 tbsp ginger, finely chopped * 150 g minced chicken meat * 100 g minced prawn meat * A pinch of salt and white pepper * 1/2 tsp sugar * 1 tbsp soya sauce * 1/2 tbsp sesame oil * 3 tbsp water * 2 tbsp green onion, chopped

(Makes 10 servings)

1. Preheat cooking oil and stir-fry garlic and ginger until fragrant, then add chicken meat, prawn meat and other ingredients except the green onion. Keep stirring until the meat is cooked, then add the green onion. Stir well and remove the mixture from heat.

2. Put 1 teaspoon of the mixture on a wonton wrapper. Brush the edge with water and gently wrap it. Repeat the step for the remaining mixture.

3. Heat the cooking oil and deep fry each wonton until golden brown. Remove wonton and place on absorbent paper. Served warm with chili sauce.

Chili sauce * 1 tbsp finely ground chili * 1 clove of garlic, finely crushed * A pinch of salt * 1 tbsp white vinegar * 3 tbsp ketchup * 1 tbsp sugar * 200 ml water * 1/2 tsp cornflour mixed with 1 tbsp water

Combine all ingredients, except cornflour mix, and cook over medium heat until it simmers. Thicken as desired with cornflour mixture.

Prawns in Soya Sauce * 500 g prawns * 1 tsp salt * 1/2 tsp white pepper * 1 tbsp cornflour * 200 ml cooking oil * 2 tbsp additional cooking oil * 2 cloves of garlic, finely crushed * 10 thin slices of garlic * 1 tbsp cooking wine * A dash of salt and pepper * 1 tbsp sugar * 2 tbsp soya sauce * 2 tbsp green onion, sliced * 100 ml water

(Makes 4 servings)

1. Shell and clean prawns.

2. Mix salt, pepper and cornflour. Sprinkle mixture over prawns and then leave for 10 minutes.

3. In a pan, heat cooking oil. Add prawns and fry until they have changed color. Drain.

4. In another pan, heat oil, then stir in garlic and ginger until fragrant. Season with cooking wine, salt, pepper, sugar, soya sauce, prawns, green onion and water. Cover pan and cook for 3 minutes. Serve warm.
