Celebration in order: Seafood rolls with fruit

The chefs at Lei Garden Seafood Restaurant offer this tangy and tasty recipe for crispy seafood rolls with fresh fruit for the Lunar New Year celebration. However, you don't have to save it for special occasions, but can eat it all year round.

Ingredients:

* 140gr prawn

* 140gr scallop

* 140gr garoupa fillet

* 140gr pineapple, apple and honeydew melon

* 70gr carrot

* 70gr onion

(makes about 20 rolls)

1. Chop all the above items into 0.5cm by 0.5cm cubes. Mix them with 200gr of mayonnaise

2. Wrap with spring roll skin according to the size of choice. Make sure it's not too big a piece, because it would be difficult to fry

3. Coat the rolls with beaten egg, then splash with breadcrumbs

4. Deep fry at medium heat then drain them till dry

5. Serve on plates according to your preference
