In addition\nto being a source of carbohydrates, fortified flour also contains a\nrange of micronutrients required by the body.<\/p>\n<p>The Head of Nutritional Studies at the Indonesian Nutritionists\nAssociation (PERSAGINT), Dr Sandjaja, stated that wheat flour should not\nonly be evaluated based on its carbohydrate and gluten content, but also\nits micronutrient content achieved through the fortification\nprocess.<\/p>\n<p>\u201cWheat flour circulating in the market is required by SNI (Indonesian\nNational Standard) regulations to contain additional micronutrients.\nPremium wheat flour must be enriched with a mixture of micro-chemical\ncompounds or premixes,\u201d Sandjaja said in a statement on Tuesday\n(1\/9\/2026).<\/p>\n<p>According to Sandjaja, several micronutrients included in the\nfortification of wheat flour comprise iron, zinc, vitamin B1, vitamin\nB2, and folic acid.<\/p>\n<p>Iron plays a role in helping to prevent anaemia caused by iron\ndeficiency. Zinc supports immune system functions and various bodily\nmetabolic processes, while vitamins B1 and B2 are essential for energy\nmetabolism.<\/p>\n<p>Furthermore, folic acid plays a vital role in cell formation and is\nrequired during pregnancy to help prevent neural tube defects in the\nfoetus.<\/p>\n<p>Sandjaja noted that fortification ensures wheat flour is viewed not\nmerely as a carbohydrate source, but as a means to help meet the\nmicronutrient needs of the population.<\/p>\n<p>Therefore, consumers can consider the nutritional information and\nfortification details listed on the packaging when selecting wheat\nflour. In addition to nutritional content, the physical condition of the\nflour should also be observed, such as a fine texture, lack of clumping,\nand the absence of a musty aroma.<\/p>\n<p>One product that lists micronutrient content resulting from\nfortification is Sania wheat flour. Information on the packaging can\nserve as a reference for consumers to understand the nutritional content\nof a product before use.<\/p>\n<p>Flour quality is also related to its use in food processing.
